Ravishing Rose Granita
Recipe : Granita with Van Loveren Almost Zero Ravishing Rose
Granita is a frozen desert and perfect for hot summer days. It’s a fancy adult version of a snow cone.
Making a Granita is really easy. I like it as I can make it boozy buy adding wine or vodka. I can make it sweet or add other ingredients such as basil to make it fresher.
Van Loveren has a range of almost zero (almost zero % alcohol) wine . I used the Rose in this Granita, it add a lovely colour and also some great flavour I wouldn’t have achieved with just fruit.
This takes about 3 hours to make as it’s a frozen dessert. Don’t worry its actually really easy . I will make this when we are having friends over , prep in the morning and give the mixture a stir while I am cooking other dishes. You can make this a few days before an event or keep it in the freezer for a sneaky treat.
Ingredients:
1 X Bottle of Van Loveren Almost Zero Ravishing Rose
sugar
¾ cup sugar
8 large basil leaves, torn, plus a few extra for garnish
1/2 cup water
Dry dill or fennel
¼ cup lemon juice
0.45kg Frozen strawberries( you can use fresh)
Method
Step 1:
Put a sauce pan on a high heat on the stove
Heat the sugar with 1 cup of water in a medium saucepan over medium heat, stirring occasionally, until the sugar dissolves then add the wine and lemon juice. Make sure the sugar has totally dissolved.
Remove from the heat.
Step 2:
Pour the mixture into a baking tray or a plastic container. The container must be able to handle being placed in the freezer.
Step 3:
Chop up the frozen strawberries and some basil leaves.
Step 4:
Sprinkle some dried fennel or dill on top of the mixture.
Step 5:
Mix the herbs and strawberries into the mixture.
Step 6:
Place in freezer. Make sure the dish is placed flat, you don’t want the mixture to spill and stick to the sides of the freezer.
Step 7:
The mixture will start to harden around the edges in about 30 minutes. Scrape the mixture with a fork. Make sure to break up any hard clumps then return dish to the freezer for 2 hours, scraping the surface with a fork every 20 minutes to create a flaky texture. ( I honestly forget about it in the freezer and scrape it whenever I remember about it)
Step 8:
Spoon the mixture in to dessert bowls or a fancy cocktail glass. Garnish with fresh sprigs of basil or mint l.

This is a great dessert if you want something that feels naughty but is actually very tame ( after Lock-down you could add wine if you feel naughty)
We may not be able to get our hands on wine (with alcohol) at the moment but there are a few good de-alcoholised options on the market.
